Welcome back!

While I have been away in another town, one of the things that I had a problem with was that I wasn’t getting the green leafy veggies like I needed to have. Every day of my life, I eat some type of green leafy veggies like spinach or romaine. Spinach is my all time favorite for salads and casseroles. So what was I going to do?

For those unenlightened souls out there, I rediscovered Subway! Okay, I have been having Subway sandwiches for years but it did not occur to me to have a salad since I always got that at home. But one day in that other town, I could not think of a single place to go for lunch that had any type of green leafy veggies. Then we came across Subway. It hit me like a ton of bricks that I could have a salad instead of a sandwich.

What I got was a beautifully put together salad, in a container the size of a dinner plate, consisting of spinach (lots of it!), tomato, oven roasted chicken, black olives and pickles. I do not use a salad dressing because it seems to take away from the taste for me. The salad was huge! It cost right around $5 and was a God send to me. It was so worth it.

This fabulous Subway is in Mountain Home, Arkansas. However, I am absolutely certain that all Subways do this. You can have the same wonderful experience I did by ordering a salad instead of a sandwich.
